TASTING NOTES Strawberry | Grape | Honey
This coffee comes to us from the eastern Guji Zone of Ethiopia. This particular region is known for producing bright and delicate coffees. This Organic Guji G2 from the Taro Washing Station was grown organically across a large farm and multiple small outgrowers in the East Guji Zone at 2,000-2,150masl. The two varietals in this Organic Guji G2, 74110 and 74112, were selectively developed in the 1970s at the Jimma Agricultural Research Center from trees found in the Metu-Bis-hari forest. They were chosen based on yield and coffee berry disease resistance and share similar characteristics in their compact sizes. All of these factors come together to create a bright, unique, and deeply sweet coffee the shines best through filter brew methods.
Our coffees do not contain natural or artificial flavorings. The listed tasting notes come from meticulous sourcing and proprietary roasting methods to enhance flavor and sweetness.

BREW GUIDE
Brew Device: Kalita Wave 185
16g of medium fine coffee (10 on Baratza Encore/2.6 on Fellow Ode with V2 burrs)
250g of water heated to 205°
PROCESS:
1. Rinse filter with hot water
2. Discard rinse water
3. Add 16g of coffee
4. 0:00 Spiral Pour 30g of water to bloom coffee
5. 0:30 Center Pour 70g of water
6. 0:45 Center Pour 100g of water
7. 1:25 Spiral Pour 50g of water
Goal Finish Time: Between 2:35-2:45
NOTE: Brew this coffee in a Hario V60 with slightly finer grind for stronger clarity and more present grape flavors.
