Some coffees start as inspiration.
This one started as a dream we’ve carried since the beginning.
Years ago, a certain blend sparked our imagination—bold, dessert-driven, and unforgettable. At the time, we didn’t yet have access to the coffees needed to create our own version… but now, after years of sourcing and refining, we finally get to bring this idea to life in true Omega fashion.
Banana's Foster Blend is our interpretation of a coffee experience that has always stuck with us—warm, sweet, and slightly wild. Built from a combination of carefully selected co-fermented, carbonic maceration, and anaerobic natural coffees from Costa Rica, Ethiopia, and Colombia, this blend leans all the way into dessert-like richness and layered sweetness.
Each sip opens with the comforting sweetness of banana bread, followed by the soft, sugary warmth of a freshly baked cinnamon roll. As it settles, the cup finishes with a darker, more complex note of cherry spiced rum, bringing depth and a hint of boozy sweetness to the experience. It’s dessert-forward, layered, and soul-warming.
This blend represents our love of expressive processing and imaginative flavor design. It’s our tribute to the style that first inspired us, now created with coffees we trust and roasted with our own signature approach.

POUR OVER BREW GUIDE
Brew Device: Origami with Cone Filter
Coffee: 21g medium coarse grind (3.3 on Fellow Ode V2 / 425 microns)
Water: 300g at 205°F
Steps:
- Rinse the filter with hot water and discard.
- Add 18g of coffee.
- 0:00 – Pour 60g to bloom; swirl gently.
- 0:30 – Pour 80g to reach 140g.
- 1:00 – Pour 80g to reach 220g.
- 1:30 – Final 80g spiral pour to reach 300g.
Goal Time: 2:05–2:25

Coffee: 12g of medium fine grind coffee
Water: 200g at 205°F
Steps:
- Steep for 2 minutes with piston inserted.
- Swirl coffee
- Steep for 30 seconds with piston still inserted.
- Slowly plunge all coffee out.
