From the heart of Quindío, Colombia, this limited-release Cherry Co-Ferment captures everything we love about fall—comfort, sweetness, and warmth in every sip.
Produced by the renowned Jairo Arcila, the same visionary behind our beloved Peach Co-Ferment, this lot represents his continued pursuit of flavor innovation through meticulous fermentation and creative processing.
Ripe castillo cherries are first given a honey anaerobic fermentation, then infused with real cherries and wine yeast during processing. Over several days, the sugars and acids develop a beautifully balanced profile that’s both vibrant and indulgent—like dessert, reimagined through coffee.
The result is a cup that tastes like Warm Cherry Pie straight from the oven—sweet, buttery, and rich. Notes of Vanilla and Brown Sugar carry through the middle, finishing with a hint of Raspberry Jam brightness that keeps every sip alive.

POUR OVER BREW GUIDE
Brew Device: Origami M / Cone Filter
Coffee: 21g medium grind (3.3 on Fellow Ode V2 / 425 microns)
Water: 300g at 205°F
Steps:
- Rinse your filter with hot water and discard the rinse water.
- Add 21g of coffee to your brewer.
- Start with a 60g spiral pour to bloom and swirl the bed.
- At 30 seconds, pour 80g of water in the center.
- At 1 minute, pour another 80g of water in the center.
- At 1:30, finish with an 80g spiral pour.
Goal Finish Time: 2:05–2:20

6 cups water | 65g ground coffee

Pro Tips:
✔ Use white flat-bottom filters whenever possible.
✔ Pre-rinse filters for the best taste.
✔ Coffee tasting sour? Grind finer to increase brew time.
✔ Coffee tasting bitter? Grind coarser to decrease brew time.

Water: 500g at 205°F
Steps:
- Steep for 4 minutes.
- Stir and skim off excess foam.
- Plunge ¾ of the way down.
- Pour and enjoy.
